This doesn't mean they aren't going to force their "beta" on all of us eventually, but at least the option exists to switch back for the moment.
BTW, I *highly* suggest sending some "feedback" when you make the switch. Maybe we can convince them that sans-serif grey text on a bright white background isn't the world's most brilliant idea, especially given all of the negative feedback that visually-impaired users and migraineurs gave them about their *previous* ALL WHITE SPACE ALL THE TIME entry-page layout "update" -- making this public so that it can be shared.
